Last Night's Risotto
Mom decided yesterday it would be good physical therapy for her healing wrist to cook a semi-ambitious dinner. It was a risotto, “Leek & Pancetta Risotto with Fines Herbes” from Williams-Sonoma. Anyone who’s ever made risotto knows that it can be delicious, but takes forever. The meal ended up being pretty European, meaning only that we sat down to eat it around 21:30.
